Bombay Brasserie, Taj Dubai’s award-winning Indian designer kitchen presents a carefully crafted Iftar experience that pays homage to the diversity of cultures, traditions and flavours celebrated throughout India during Ramadan. The hearty and wholesome menu is deeply rooted in history and draws inspiration from Iftar dishes once savoured by the powerful dynasties of the medieval world – from the kitchens of the great Shah Mir of Northern India to the army kitchens of Tughlaq in Daulatabad towards the land of the Nawab of Arcot, Tamil Nadu. Embark on a gastronomic journey to uncover a unique taste of India as the Bombay Brasserie chefs pay tribute to the secrets of the imperial kitchens which gradually made their way across the country to the bylanes of many Indian towns like Purani Delhi and Ajmer. The menu is an amalgamation of the local ingredients, culinary traditions and techniques of different geographical regions of the Indian subcontinent.

Chef

 Chef Vikas Milhoutra began his professional career at the iconic Taj Mahal Palace Mumbai. After travelling the world, working with Taj in Goa, Maldives, London and most recently Taj Santa Cruz, Mumbai, he recently joined Taj Dubai as Executive Chef where he will oversee all food related operations for the hotel’s restaurants, banqueting and in-room dining.
