While grilled seafood lashed with lemon and a side of wasabi mayonnaise or batter-fried anchovies with several pints of beer remain all-season hits, the kitchen specializes in the refined and spicy, world-famous Chettinad cuisine of Tamil Nadu. These distinctive dishes use South Indian spices like kalpasi (black stone) and the rotund goondu milagi (dry, red chilly).
