This specialty menu is divided in Asaivam and Saivam with an equal selection of vegetarian and non-vegetarian dishes.

Food is served in the traditional way on a banana leaf called the Elai Virundhu using a two/four compartment thookku carrier. An array of accompaniments including home-made oorgai (pickles), vadams (made of rice, urad dal, sago) and thuvayal (traditional chutneys) complement the main course.  

Guests can experience a cooking method seldom available in hotels in this region. The Thajavur Virundhu is slow-cooked in earthenware pots with pure cow ghee and freshly sourced ingredients having a homely touch and an earthy flavour. 

The Saivam (vegetarian) fare is pure Thanjavur Brahmin food without onions and garlic, using subtle spices. The Asaivam menu includes River fish like Vral (snake head fish) - a delicacy in of the region. Other rare fish such as White bait, Milk shark etc are also used in this cuisine.

Vegetarians can relish delicacies like Keerai Masiyal (Mashed Spinach cooked with asafoetida, cumin and tempered with red chilli served with moru kozhambu and rice), Chinna Vengaya Vathakuzhambu (Sundried vegetables and shallots cooked with spices served with urulaikizhangu podimas and rice), Arachuvitta Sambar (Authentic sambar made with lentil, home-made spices and roasted coconut served with vegetable Masala poriyal and rice) and more.
