Chef Sewa Singh from Vivanta by Taj - Dal View, Srinagar brings his secret recipes to Beyond Indus - the Indian specialty restaurant at Taj Club House - from January 26-February 5, 2012. Designed using the most authentic ingredients, indulge in a unique cuisine spiced with Chef's expert touch that has guests from across the globe.
The menu comprises of a variety of specialties like Nadru Tikki (lotus stem kebab), Kashmiri Seekh Kebab (skewered lamb mince flavoured with Kashmiri spices) and Tabakmaaz, a Kashmiri delicacy made with tender mutton ribs and a dash of spice. The main course selection is exhaustive with a range of vegetarian and non-vegetarian options like Khatta Bagan (brinjal cooked with tamarind and Kashmiri spices), Dum Aloo, Nadru Yakhni (lotus stem cooked in yoghurt gravy and flavoured with mint) and more, served with breads and the specialty Kashmiri Pulao.
The highlight of the festival is the Dal Indus (Traditional black lentil simmered overnight on clay oven finished with fresh tomato and homemade spices), Mirchi Korma (Lamb curry with Kashmiri Chilies) and Wazwan specialties like Rista (Lamb balls cooked in fresh tomato gravy), Roganjosh and Gustaba (Lamb balls cooked in yoghurt gravy).
Temper the spices with Phirni (a rice dessert enriched with seasonal fresh fruits) and a Duet of Almond Halwa and Kulfi - a perfect ending to your meal.
