Grand Master Chef Hemant Oberoi has taken Indian food to a different dimension with new techniques, innovative presentations and usage of organic produce and spices. He has reinvented Indian food with unusual creations and pairings thus creating an exclusive gourmet dining experience. The menu is a rich accumulation of Indian recipes evolved to the next level of modernity and served in pre plated portions.
Each dish is a craft in itself with different flavours permeating to its core. Varq retains the Indian traditional way of cooking while using exotic ingredients like sea bass, diver’s scallops, goose liver, halibut, sand crab and Karachi prawns.

The restaurant offers the mix of Indian classical dishes as well as new innovative creations from across the nation. This gourmet paradise reflects flavors of India in a contemporary way, served in a gourmet dining ambience. The tamarind sorbet, sugarcane sorbet to change the palate, Kadi patte ke scallops, Ganderi Kebabs, Haleem Aur Kebabs, Atta Raan will be carved by table side. Unusual combination of a prawns and asparagus curry from Calicut, varqui crab (a mille feuille of peppered crab and tandoori prawns), Martabaan meat curry-a meat curry with red pickled chillies cooked in a ceramic jar would be the connoisseurs’ choice. A new selection of breads and spreads will add to the dining experience.

The dessert station as a show kitchen is certain to be a visual treat for the guests. A kulfi trolley, a masala tea creme brulee, an ice cream bombe with baileys rabdi will be the dessert cynosure. Like nowhere else, the restaurant will offer unique pairing of desserts with teas.

Varq boasts of contemporary French crockery from Reynaud designed by celebrated Chef Thomas Keller. It uses the finest first series Glassware from Schott Swizel from Germany and Silver Plated Italian cutlery from Sambonnet.

The spatial ambience comfortably engulfs the diner, immersing them into a lusciously rich experience surrounded by artifacts and treasures. The presentation of the exquisite culinary inventions by renowned Chef Oberoi creates the ultimate dining experience.
The restaurant retains the existing murals by celebrated artist Anjolie Ela Menon. This work has been carefully restored and sits comfortably within its new contemporary designed interior. In contrast, additional modern artworks compliment the restaurant in the form of oil paintings, carvings, antiques and modern sculptures.
The private dining room, done with élan and finesse, is sure to capture your senses with its special Dégustation Menu.
Traditional Indian themes are seamlessly married with bespoke furnishings, mixing timber, creamy leather and gold textures to create a contemporary and classic ambiance. The materials and finishes palette is truly rich and sumptuous, and accentuated by controlled lighting. Rosewood wall paneling and a dark chocolate monolithic tile floor is contrasted by the blanket of the gold leaf coffered ceilings above. Here, six beautifully hand made modern red bead pendant drums introduce colour and sparkle.
The grand scaled main entrance façade incorporates a black timber lattice frame encasing circular clear beveled glass apertures with ruby red glass in fills. To compliment this arrangement and further enhance the entrance, specially designed pair of illuminated cylindrical glass sculptures are placed on beautifully carved stands. Here the glass drums include a combination of polished cut glass floral detail, set into a background of gold leaf.
